Chocolate Mousse

I think Valentines Day is for CHOCOLATE! And yes, you can go out and buy a heart shaped box of chocolates, or a fancy dessert from the grocery store or a pastry shop. But why, when you can make, literally in 5 minutes, a creamy, homemade mousse that your valentine will love.

So go ahead, order that pizza, but make sure the dessert is homemade. ¬†What better way to say “I love you!”

Chocolate Mousse

(adapted from Wegmans Menu magazine)

Makes 14 – 1/2 cup servings!

1/3 cup unsweetened cocoa powder (use an expensive brand–it will taste more chocolaty!)

1/2 cup sugar

1 container (8 oz.) mascarpone (find it in the fancy cheese section of your grocery store)

1/4 cup + 1 Tablespoon milk (or if you indulge, rum)

3 and 1/2 cups heavy whipping cream

Combine the cocoa, sugar, mascarpone and milk in a large bowl. Stir well. Beat with an electric mixer on LOW until smooth.

Fold in cream (not whipped). Beat with electric mixer on LOW for 30 seconds, then on HIGH for 2-3 minutes until fluffy.  Chill at least 1 hour before serving.
