Cooking at the Market


Last winter I was asked to do a series of 4 demos throughout the spring and summer of 2016 at the Boalsburg Farmers Market and I happily said “yes!”  Since it was February, just thinking of all the yummy produce the vendors at the market would provide this year made me smile. Not to mention the weather!!
This picture shows exactly what I was smiling about in February.

A perfect Pennsylvania day!
All of the produce and meat that I used were fresh from the market.  Right now is the PERFECT time eat as many strawberries and shell peas as you can!!

Greens with Grilled Chicken, Fresh Shell Peas and Roasted Spring Onions topped with Fresh Strawberry Dressing

Dressing Ingredients:
1 cup fresh strawberries, hulled and sliced
1 Tablespoon balsamic vinegar (I used a white balsamic vinegar I bought at Trader Joe’s–it has a milder flavor than regular balsamic vinegar)
3/4 teaspoon freshly ground pepper
1/2 teaspoon sugar
1/4 teaspoon salt
2 Tablespoons olive oil
Salad Ingredients:
Chicken breasts, cut in half
Spring onions
Fresh shell peas, shelled
For a chunkier dressing, chop up the strawberries in a nut chopper (or chop finely with a knife) and place in a Mason jar.  Add all the other ingredients and put a lid on the jar.  Shake hard and well to combine the ingredients and break up the strawberries. For a smooth dressing, combine all ingredients in a blender or food processor.
To create the salad, grill chicken breasts and chop into small pieces.
Clean and cut off the ends of spring onions.  Place on grill and let them char just a bit.
Shell peas.
Combine lettuce greens, chicken, spring onions, peas.  Top with strawberry dressing.
