TOMORROW……the OPENING of TRADER JOE’S!! The store hours are 8 AM until 9 PM. The address is 243 Patriot Lane in the Woodycrest Center (next door to the new Pier 1–which I might add is really a lovely store).
Next Tuesday, November 13, I will be teaching a class through the State College Area School District’s Community Education Program. The class is called “Be Prepared for the Holidays” and I will teach make-ahead casseroles for those busy days and desserts you can make now and freeze for later.
We will also make some quick food “gifts” including easy-to-make toffee. Here is a link to the fall catalog.
Easy to Make English Toffee
1 bag Ghirardelli 60 % Cacao Chocolate Chips
2 sticks butter
1 cup sugar
1 teaspoon vanilla
Spray a 9×13 glass baking dish with Pam. Spread the pecans on the bottom of the pan. In a pan, melt the butter, the add the sugar and vanilla and cook over a medium-high heat. Stir constantly until caramel colored. Pour this over the pecans. Sprinkle the chocolate chips over the hot toffee. After about 5 minutes, when they are very soft, use a knife (an off-set knife works best) and spread the chocolate. Let the toffee cool, then break it into chunks, place it is a decorative bag and tie with a ribbon.
Also, if you want to make that easy sweet potato puree I posted a few days ago, here is another, quicker way to cook the sweet potatoes in the microwave, straight from the new Wegmans Holiday Menu Magazine.
This weekend Tait Farm will be holding their annual Holiday Open House. I love to go out to Boalsburg every year for this event because there are always lots of fun gifts to buy, decorating that inspires me and lots of local food to be tasted!
Have a happy weekend!
