My husband came home from a business trip the other day and told me of a fabulous salad he had in Banff, Canada. This salad cost him $16.00 but I knew that I could make it a lot cheaper and with pears in season, it was the right time to try it.
The recipe here is with blue cheese, which is how it was served to Charles. But the family is not very excited about blue cheese so I substituted goat cheese. It was great. Who knew that you could “caramelize” pears!
I used Anjou pears and they worked great; firm enough not to fall apart. You can also use Bartlett pears.
